PRODUCT GUIDE FOR SCHOOLS

NUTRITION FACT LABELS – What Do I Really Need To Keep?

In order for the state agency to complete an accurate nutrient analysis of your school’s selected week of menus, you will need to collect nutrition fact labels or manufacturer’s specification sheets which include nutrient information for some of the meal items served.

Many of the items that schools typically serve are already found in the Child Nutrition Database (CND) used by the state agency. As a guideline, the nutrient information for the following products are not found in the CND and will need to be made available to the consultant doing your School Meals Initiative Nutrition Assessment:

Meal Item or Recipe Ingredient

Dairy Products

  • Yogurt
  • Reduced Fat or Sodium Cheese
  • Egg Substitute
  • Ice Cream, Ice Milk, Frozen Yogurt, Sherbet
  • Non-Dairy Sour Cream
  • Reduced Fat or Fat Free Sour Cream
  • Whipped Toppings
  • Cheese Sauce

Meat, Poultry, Fish, Processed Meat

  • Any Processed Meat, Poultry, or Fish Patties/Nuggets, etc.
  • Ham
  • Hot Dog
  • Sausage
  • Luncheon Meat
  • Reduced Fat or Sodium Bacon
  • Pizza
  • Burrito

Fruit / Fruit Juices

  • Fortified Juices

Vegetables

  • Reduced Sodium Canned Vegetables
  • French Fries
  • Potato Rounds
  • Hashbrowns

Commercial Grain Products

  • Granola Cereals
  • Pancakes, Waffles, French Toast
  • Muffin & Bread Mixes
  • Seasoned Breadcrumbs
  • Taco/Tortilla Shells
  • Crackers/Chips (unless saltine or graham)
  • Pizza
  • Burritos
  • Ravioli
  • Bread Sticks, Cheese Bread
  • Desserts (except gelatin)

Fats

  • Shortening
  • Margarine
  • Vegetable Oil
  • Reduced Fat or Sodium Salad Dressing - All Types

Condiments

  • Reduced Fat or Sodium Condiments - All Types

Spices, Herbs, Seasonings, Mixes, Misc.

  • Seasoning & Sauce Mixes
  • Reduced Fat or Sodium Nut Butters
  • Reduced Fat or Sodium Soups & Soup Bases

Please remember that the nutrition fact labels or manufacturer’s specification sheets must contain complete information including the weight for the stated serving size and amount of each of the following nutrients: calories, protein, total fat, saturated fat, carbohydrate, vitamins A & C, calcium, iron, dietary fiber, cholesterol & sodium.
